Sauteed Fresh Green Beans

Fresh Green Beans are a healthy and delicious delight. You may cut off the stems if you don't want to snap them as long as you're not afraid of some ancient food pioneers haunting your kitchen.
Ingredients
1 Lb fresh green beans (snap beans)
4 Tbsp Olive Oil
2 Cloves Garlic Chopped
1/2 C Sweet Onion
1/4 cup Sweet Red or Orange Bell Pepper diced
2 slices bacon, uncooked, cut in 1/2 inch lengths
1/4 cup fresh basil, chopped
1 tsp Sea Salt
pinch black pepper
pinch crushed red pepper
1 C chicken Stock

Prepare
Rinse Green Beans and snap off stems

Cook
In a 12 inch skillet
heat oil, garlic and onion over medium heat till onion is slightly tender
add Bell Pepper, Bacon and Basil and continue to cook until bacon is translucent and tender.
Add Green Beans and remaining spices
Mix well till Green Beans are coated with oil.
add Chicken stock and bring to boil stirring mixture occasionally.
Lower heat to medium low and cover loosly with lid. make sure cover is loose enough for steam to vent as mixture cooks.
Continue to cook, covered for 30 minutes turning mixture occasionally.
Don't be concerned if most of or all of the liquid cooks off. Just let the onions and peppers carmelize but stir often enough to keep them from sticking.
Remove from heat and serve.
